Before opening his own restaurant business he worked for great hospitality businesses like Merriman's Hawaii, and as general manager for Robert Redford’s Sundance Mountain Resort. I had a great time catching up with Brooks to learn more about the future of the independent food scene, being a community restaurant, what growth means to them and the rise of comfort food.
